<p><span style="font-size: small;"><span style="font-family: Times New Roman;">This is the start of my favorite time of year.  From October through Christmas, I&#8217;m that giddy, goofy annoyingly cheerful person everyone hates (I guess I should apologize upfront for all the merriment and good cheer that will be unleashed&#8230;mostly to the Boy since he has to live with me).  While I enjoy Spring too (especially after having suffered the slim pickings of the farmers markets during the lean Winter months), this time of year is pretty much the cat&#8217;s pajamas in my book.  And with more space in my new apartment, this year I can crank out the cookies and treats like nobody&#8217;s business.  My first stop? Pumpkin shortbread cookies!</span></span></p>

<p><span style="font-size: small; font-family: Times New Roman;">It all started when I was trying some of the new gelatos at the </span><span style="font-size: small; color: #800080; font-family: Times New Roman;"><a href="http://www.dolcezzagelato.com/" target="_blank">Dolcezza</a></span><span style="font-size: small; font-family: Times New Roman;"><a href="http://www.dolcezzagelato.com/" target="_blank"> </a>stand at the </span><a href="http://www.freshfarmmarket.org/markets/penn_quarter.html" target="_blank"><span style="font-size: small; color: #800080; font-family: Times New Roman;">Penn Quarter Farmers Market</span></a><span style="font-size: small; font-family: Times New Roman;"> last Thursday.  One of their newest flavors was a Georgia Butter Pecan and it was heaven.  I immediately thought a great shortbread would be the perfect dipping utensil for the gelato.  Since I still had some pumpkin puree from the </span><a href="http://www.adventuresinshaw.com/2009/09/pumpkin-walnut-bread/" target="_blank"><span style="font-size: small; color: #800080; font-family: Times New Roman;">pumpkin walnut bread</span></a><span style="font-size: small;"><span style="font-family: Times New Roman;">, I thought I&#8217;d add it to my go-to shortbread cookie recipe.  The added pumpkin puree meant I had to tweak the dry ingredients a little (to compensate for the added moisture to the recipe).  But the end result was an ode to pumpkin pie set amongst the all too familiar snappiness of a shortbread cookie.  This was pretty much Fall wrapped in a cookie package&#8230;woohoo!</span></span></p>

<h3 class="fn">Recipe: Pumpkin Shortbread Cookies</h3>

<li class="ingredient">2 cups flour</li>
<li class="ingredient">1/4 teaspoon salt</li>
<li class="ingredient">2 sticks (or one cup) unsalted butter, room temperature</li>
<li class="ingredient">1/2 cup powdered sugar</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">1 cup pumpkin puree (see this <a href="http://www.adventuresinshaw.com/2009/09/pumpkin-walnut-bread/" target="_blank">post</a> on how to get pumpkin puree from a real pumpkin)</li>
<li class="ingredient">1/2 tablespoon pumpkin pie spice</li>

<li>Preheat oven to 350 degrees and line two baking sheets with parchment paper.</li>
<li>Using a stand (or hand) mixer, beat the butter until creamy. Add the powdered sugar and continue beating until the mixture is fluffy. Add the flour and beat until incorporated.  Add the pumpkin, pumpkin pie spice and vanilla extract and beat until a sticky dough is formed.</li>
<li>Place the dough ball on a piece of parchment paper and with lightly floured hands, roll it out into a thick log. Wrap the log in plastic wrap and refrigerate for at least an hour (but no more than 2).</li>
<li>Take out the dough log and using a non-serrated knife, slice the dough into 1/4 inch thick discs. Place the cookies on the parchment paper and bake them for 15-20 minutes, or until they are lightly brown. Place the cookies on a wire rack to cool completely before serving. Makes 20 cookies.</li>

<p style="text-align: left;">The other day I was idly going through my Google reader when I hit upon the latest entry from my blogger friend <a href="http://sizzlesays.wordpress.com/2009/06/05/youre-the-song-i-cant-keep-out-of-my-mind/" target="_blank">Sizzle</a>.  She had been running a bit of a contest, giving away a CD of covers she loved.  For whatever reason, I didn&#8217;t enter&#8230;blame my forgetfulness&#8230;or laziness&#8230;whatever.  Either way, I was kicking myself when I read the list of covers she included in the CDs she gave away.  I love, love, love Katie Thompson&#8217;s cover of Crowded House&#8217;s &#8220;Fall at Your Feet&#8221; and the Postal Service&#8217;s rendition of Phil Collins&#8217; &#8220;Against All Odds&#8221; really lives up to the haunting nature of the original.  So being ever resourceful, I emailed Sizzle and <span style="text-decoration: line-through;">begged</span> kindly asked if she&#8217;d sell me a copy of the CD&#8217;s.  And that&#8217;s when she suggested a trade&#8230;</p>

<p style="text-align: left;">The deal was, I either send some recipes friendly to Sizzle&#8217;s new healthy eating lifestyle OR I bake her some diet safe cookies.  Considering the fact that I am also trying to eat healthier, I could have sent along some tasty but healthy recipes.  But I know Sizzle&#8217;s been going through a lot and I figured homemade treats from across the country would cheer her up some (I hoped).  I remember how touched I was when Joy sent me a care <a href="http://www.adventuresinshaw.com/2008/07/walnut-coffee-ice-creamor-ode-to-joy-2/" target="_blank">package</a>, so I thought it was time to pay it forward.  Sizzle had told me she really wanted to try a coconut almond chocolate macaroon recipe she&#8217;d seen online.  I took a look at the recipe and it not only looked simple, it looked delicious.  Since I didn&#8217;t have most of the ingredients, I made a list and headed out to Target (did I mention how dangerous it was for me to live this close to a Target?).</p>

<p style="text-align: left;">It&#8217;s not very hard to get me to bake and I know that a good cookie can do wonders for the soul.  The very smell of the toasted coconut and almonds lifted up my spirits on a rainy day (seriously Mother Nature, I&#8217;m not kidding&#8230;I&#8217;ll totally post those pictures on the interwebs).  Sure I was getting CD&#8217;s in exchange for the cookies, but truth be told I probably would have made them for her anyways.  So Sizzle, these lovely macaroons (uhmmm, the Boy and I kinda had one or two) are on their way to you!  Let&#8217;s just hope the chocolate doesn&#8217;t melt&#8230;or the FedEx guy doesn&#8217;t get hungry.  And FYI, these cookies TOTALLY taste like the Girl Scout&#8217;s Samoas (bonus!!!).</p>
<p style="text-align: left;">Coconut Almond Chocolate Macaroons (adapted from <a href="http://adashofsass.com/2009/04/26/coconut-almond-macaroons-with-dark-chocolate/" target="_blank">A Dash of Sass</a>)</p>
<p style="text-align: left;">3 cups sweetened coconut flakes</p>
<p style="text-align: left;">1 cup slivered almonds</p>
<p style="text-align: left;">2/3 cup sweetened condensed milk</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">2 egg whites</p>
<p style="text-align: left;">pinch of salt</p>
<p style="text-align: left;">12 ounces semisweet chocolate, chopped</p>
<p style="text-align: left;">3 tablespoons heavy cream</p>

<p style="text-align: left;">Preheat oven to 35o degrees.  Line two baking sheets with parchment paper and then grease the parchment paper.</p>
<p style="text-align: left;">Mix together the coconut and almonds in a large bowl.  Heat a nonstick skillet over medium heat and place half the coconut/almond mixture in the skillet.  Constantly stir the coconut and almonds to make sure it doesn&#8217;t burn.  Toast the coconut and almonds until the flakes start to turn a light brown.  Remove from heat and allow to cool.</p>

<p style="text-align: left;">In a stand mixer, add the egg whites and salt and whip until the whites form sturdy peaks (but not whipped to the point of becoming dry).  Once whipped, take the bowl off the stand mixer and set aside.  In a large measuring cup, measure out the sweetened condensed milk and add the vanilla.  Stir until the milk and vanilla are combined.  Once the coconut/almond mixture is cooled, add the milk/vanilla mixture and stir.  Fold in the egg whites, making sure all the ingredients are incorporated.</p>

<p style="text-align: left;">Drop the batter by the heaping tablespoon full onto the greased parchment paper.  Bake for 12 to 14 minutes or until golden brown around the edges.  Remove from the oven and allow to cool completely before handling.</p>

<p style="text-align: left;">While waiting for the cookies to cool, start on the chocolate coating.  Place the chocolate and the heavy cream in a microwave safe bowl and zap for 35 seconds.  Remove the bowl from the microwave and stir the chocolate until it starts to smooth.  If the chocolate is still a bit chunky, microwave it again for 10 seconds.  Continue in 10 seconds intervals until the chocolate is smooth.  Line another baking sheet with parchment paper and then dip the bottom of the cooled cookies in the chocolate.  Place the cookies (chocolate side down) on the parchment paper.  Once all the cookies are completely dipped, use a spoon to drizzle chocolate over the top of the cookies.  Place the cookies in the refrigerator until the chocolate is set &#8211; about 20 minutes.</p>

<p>So you&#8217;re finishing up your Christmas shopping, happily checking everyone off of your list and then it hits you:  what about my co-workers?  Sure a lot of them can be complete and total idiots, but &#8217;tis the season to be forgiving (and to ignore the fact that some of your co-workers &#8211; thankfully none of mine &#8211; have the charm of a poisonous snake) and what says &#8220;let bygones be bygones&#8221; like homemade treats?  Also, they&#8217;re a heck of a lot cheaper than giving everyone gift cards&#8230;.</p>

<p>I had decided to make gift bags of baked goodies a few weeks ago, so on Thursday night I pulled out a ton of ingredients to make dozens of cookies for my co-workers.  Let me tell you a bit about my co-workers.  I have worked in a lot of offices and have dealt with everything from an older co-worker telling me &#8220;I haven&#8217;t had the pleasures of a woman in years but would love to start again with you&#8221; (did I mention this man was TEN years older than my father) to a female co-worker who was caught &#8220;getting cozy with&#8221; our boss in the parking lot (just a few weeks after her return from her honeymoon might I add).  So it&#8217;s refreshing to work with a group of people who are genuinely nice and make me laugh consistently.  I have often baked Christmas goodies as gifts to co-workers but I really wanted these bags to be special because they were going to very special people (insert heart warming Christmas &#8220;awwwww&#8221; here).  As I was going through my boundless cookie recipes, I settled on making each co-worker a dozen cookies of four different varieties.  With <a href="http://www.stopthepota.blogspot.com/" target="_blank">the Boy</a> as my taste tester, I rolled up my sleeves and got to baking.</p>

<p>I knew immediately the Teaism inspired <a href="http://dcist.com/2005/07/27/baking_in_teais.php" target="_blank">Salty Oats cookie</a> would be included in my gift bags because my co-worker DW loves them.  Not your average oatmeal cookies, these little gems are the softest, most flavorful oatmeal cookies I have ever had.  Topped with a sprinkling of kosher salt, the sweetness of the cookie is offset with a salty finish.  They are always a hit, so it was really a no brainer to include them.  Even better, one recipe easily makes 3 dozen cookies and they&#8217;re a snap to make.  And when you&#8217;re making more than 10 gift bags, those two factors push a cookie up to the top of the list!</p>

<p>Who doesn&#8217;t like chocolate chip cookies?  I mean seriously, who doesn&#8217;t?  And honestly, I don&#8217;t think I want to know anyone who doesn&#8217;t like them.  Pete over at Pete Bakes reminded me of the <a href="http://www.peterandrewryan.com/baking/2008/06/chocolate-chips-cookies/" target="_blank">classic Tollhouse Chocolate Chip cookie recipe</a> and the words &#8220;yields 3 dozen cookies&#8221; on the recipe solidified it for me:  these cookies were going in the bag!  Just like the Salty Oat cookies, these chocolate chip cookies were a breeze to make and the classic Tollhouse recipe didn&#8217;t fail to disappoint.</p>

<p>When I brought in some Christmas sugar cookies to work a few weeks ago, they were a hit so I knew I&#8217;d have to include them in my bag.  Unlike other sugar cookies, you don&#8217;t have to refrigerate this dough before baking them and they make a LOT OF COOKIES!  They yielded so many, the Boy was able to make off with a baggie full for his own co-workers (and they were a hit mind you&#8230;not to brag or anything &#8211; okay I&#8217;m bragging a little).  I will admit that by the time I got around to making the sugar cookies I was a bit tired, so I didn&#8217;t decorate them.  But they were still a hit!</p>

<p>I wanted to include a unique cookie in the bag, but wasn&#8217;t sure which one.  As I was aimlessly wandering on the &#8216;net (NOT while I was at work mind you), I stumbled upon Joy&#8217;s <a href="http://foodproof.com/recipes/view/buttery-cherry-jam-cookies-202#block" target="_blank">Buttery Cherry Jam Cookies</a> on Foodproof.com and was in love.  They looked light and (as the title suggested) buttery and who doesn&#8217;t love cherry jam?  Sure the first time I would be making them would be for the gift bags, but I trust Joy&#8217;s palate and the recipe (yet again) yielded a number of cookies.  It also helped that the recipe was easy peasy and didn&#8217;t require too many ingredients.  I used a local brand of cherry preserve that I love slathering on scones, so I highly suggest using quality cherry jam for this recipe.</p>
<p>I&#8217;ve made baked goodie gift bags for people before and it&#8217;s always ended up in late night scrambling for more flour and tears at the amount of work still left to be done at 1 am.  This time, however, I was armed with a plan and four recipes for cookies that were tasty but not labor intensive.  All the gift bags were done by 10 pm and I even had enough time left over to torture the Boy with an episode of Criminal Minds. <p>I&#8217;m in Georgia visiting family this week for the holidays, so the posts may be few and far between this week.  I&#8217;ll be busy making the <a href="http://adventuresinshaw.com/2008/03/31/ode-to-joy/" target="_blank">Red Velvet Cupcakes</a> for Christmas dinner and helping my mother make the stuffing and sweet potato souffle, which leaves little time for blogging.  But I&#8217;ll be back next week testing recipes from Daphne&#8217;s Christmas gift</p>
