I simply pushed up on the removable bottom and then slid the cheesecakes off. I have heard horror stories of tarts sticking to the removable bottom, but if you get a good quality, non-stick tart pan, you should be fine. Our hostess had received cool mini-cheesecake pans for Christmas and whipped up a batch of cheesecake that was very tasty. I like the whole mini idea, way easier to eat more and still feel good.
